what are my options for pursuing current customers if start my own business?

My non compete agreement is not signed by my employer, but does have my signature. It has a one year term, and prevents me from contacting any former ustomers. My employer is not short on resources if they chose to pursue legal action. I would like to partner up with an existing service provider in my area. My current employer has over half of the market and I have managed over half of those customers. It would be difficult not to contact any of the customers that I have had interaction with. If I am not the only sales rep in this new venture can "we" pursue any of my current customers? Can we pursue customers in the area managed by my branch that I have not personally managed? If I demonstrate that I am not "targeting" customers that I had interaction with during my current employment, will that allow me to avoid legal trouble? I am looking for some guidelines to make it through the first year as a service provider. Thank You for any guidance you may provide.
