Can you exagerate education credentials

I read that you can have legal troubles if you misrepresent your education credentials. In job hunting I state honestly that I have a Bachelor of Science in Education but have been stating my minor and or major areas of study include sociology and psychology which is untrue. I have only taken a few courses in each area. If lying about degree is libelous does that also include minor and major areas of study.

Why take that risk? You can include courses completed in those areas (in a cover letter or on the application) without that risk. The employer can always request a transcript and what would you do then?

The easiest way to get rid of an employee is to review their employment application for facts that are not true. Firing someone for that is almost an insurance policy against that action ever being successfully challenged.
